The gastronomy distinguishes one region and the Algarve is a good example of that. The traditional Algarve cuisine is rich, due to the ingredients used, reflecting the fresh flavours of the sea and the pleasant aromas of the countryside. It is usual to say in the Algarve that “the sea commands the meal, the almond influences the dessert”. There are centuries of culinary knowledge, with special emphasis on fish, shellfish and countryside flavours and almond, carob, fig and eggs desserts.
